Green Eggs & Ham

The doctors Green Eggs and Ham Sam I am.

Ingredients:
  • 1 tbsp butter
  • 4 large brown eggs
  • 1 cup of frozen kale (chopped)
  • 1 tsp of minced onions (re-hydrated)
  • ½ cup of pineapple juice
  • ¼ tsp coarse black pepper
  • 1 large slice of ham steak
  • ¼ cup of garlic & herb feta cheese (Athenos®)
INSTRUCTIONS:

Green Eggs & Ham
1.Start by braising ham steak in a large heavy skillet with 2 tbsp of butter.
2. Slightly brown on each side, add pineapple juice and cover, lower heat and simmer for 4-6 minutes or until liquid is syrupy.
3. Then remove from heat, leave covered.
4. Crack eggs into a medium mixing bowl, whisk them and slowly add the chopped onions, feta cheese and pepper.
5. Add 2 tbsp of butter and kale to a non-stick skillet on medium high heat for 2-4 minutes, then add egg mixture, scramble to the consistency you prefer.

Breakfast Biscuit

When your on the go, this recipe makes a quick breakfast sandwich.

Ingredients:
  • 1 over easy egg
  • 1 leaf of green leaf lettuce
  • 3 slices of cooked crispy thick hickory or apple wood smoked bacon
  • 1 tsp butter
  • 1 warm buttermilk biscuit
  • 1 slice of smoked Gouda cheese (thinly sliced or shaved)
INSTRUCTIONS:

Breakfast Biscuit
Toast your biscuit in a skillet and immediately cook your egg over easy and assemble your sandwich.

Vegetable Omelette

This is a great way to start your day.

Ingredients:
  • 1 tbsp of butter
  • ¼ cup of scallions (diced)
  • ¼ cup of red bell peppers (diced)
  • ¼ cup of green bell peppers (diced)
  • 4 extra large brown eggs
  • ¼ cup of mushrooms (diced)
  • ¼ cup of diced tomatoes (drained)
  • ¼ cup of shredded of American cheese
INSTRUCTIONS:

Vegetable Omelette
1. In a 12" non-stick on medium heat add butter and mushrooms saute until slightly crispy, then add tomatoes, red and green bell peppers cook for 2-3 minutes.
2. Add scallions, eggs, cheese, stir lightly to evenly distribute ingredients.
3. Brown and flip over until other side is also brown and egg is done in the middle.
4. Remove from pan, serve immediately.

Crispy Tender Home Fried Potatoes

Quick & Easy home fries.

Ingredients:
  • 1 tsp garlic powder
  • 2 tbsp vegetable oil
  • ¼ tsp of ground nutmeg
  • 1 small onion (diced into 1" pieces)
  • 2 tbsp butter
  • 1/4 teaspoon pepper
  • 1/2 tbsp Lawry's® Seasoned Salt
  • 6 large potatoes (diced into 1½" cubes)
INSTRUCTIONS:

Crispy Tender Home Fried Potatoes
1. In a large bowl, combine potatoes, seasoned salt and pepper.
2. In a preheated 12" non-stick skillet on medium heat add oil and potatoes, brown potatoes on all sides, (Note: Wait for potatoes to release from pan before turning.
3. Once potatoes are brown on all sides, add onions, 2 tbsp of butter, garlic and nutmeg.
4. Turn heat to simmer and cover for 4 minutes, turnover once more then remove from heat.
Serve with our Green Eggs & Ham along with a premium Orange Juice.

Sombrero Tater Tots

CAUTION: this recipe may cause drowsiness due to the amazing taste in these little tots. Once you remove their sombrero they can cause you to start your siesta early, maybe before noon!"

Ingredients:
  • 1 cup of egg whites
  • ¼ cup of minced garlic
  • ½ tsp ground black pepper
  • ¼ cup of dried parsley flakes
  • 1 tbsp of minced onion bits
  • 1 cup plain Panko breadcrumbs
  • 4 cups of cold mashed potatoes
  • 2 tbsp of chicken bullion powder
INSTRUCTIONS: Preheat oven at 375°

Crispy Tender Home Fried Potatoes
1. In a large mixing bowl, mix lightly but thoroughly, potatoes, garlic, pepper, parsley, onion bits, and bullion.
2. Using a melon scoop shape into 1½" balls.
3. Paint tots with egg wash, roll in Panko breadcrumbs.
4. Fold ½ slice of bacon over each tot securing them with toothpicks.
5. Place on a broiler pan so excess oil can drain while cooking.
6. Put tots in preheated oven, allow tots to turn golden brown, cook until bacon is crispy, about 10-15 minutes depending on your oven.

Buttermilk Apple Cinnamon Crepes

If you like pancakes, then you'll love these crepes.

Ingredients:
  • 1 tsp cinnamon
  • pure maple syrup
  • 1 tbsp confectioners powdered sugar
  • ¼ cup of melted butter
  • 2 cups of buttermilk pancake mix
  • 2 cups of unsweetened apple juice
INSTRUCTIONS:

Buttermilk Apple Cinnamon Crepes
1. Heat skillet over medium-low heat or electric griddle to 375°.
2. Combine apple juice, pancake mix and cinnamon in a large mixing bowl and stir until all lumps disappear (do not beat or mix).
3. Let stand 1-2 minutes to thicken.
4. Pour slight less than ¼ cup of batter for each crepe onto lightly greased skillet.
5. Turn when crepes bubble and bottoms are golden brown.

NOTE: For soft and fluffy crepes, avoid turning them more than once!
Pour a little melted butter and warm maple syrup over each crepe, sprinkle confectioners powdered sugar on top and serve hot.

Caramel Cinnamon Apple Jacks

Calling all Apple Jack cereal lovers. This is another out of this world “yummy tummy” pleaser! Keep a lookout for strange alien like beings outside your kitchen door. Your only solution is to eat these quickly. Hope you enjoy it!


Ingredients:
  • 1 tsp cinnamon
  • 1 cup of caramel
  • 1 tbsp unsalted butter
  • 1 tbsp confectioners powdered sugar
  • unsalted peanuts or strawberries for garnish
  • 1 mine of Cool Whip®
  • ¼ cup of melted butter
  • 2 cups of buttermilk pancake mix
  • 1½ cups of unsweetened apple juice
  • 2 ambrosia apples (cored, peeled & finely chopped
INSTRUCTIONS:

Caramel Cinnamon Apple Jacks
For The Syrup: 1. Place apples in a non-stick medium saucepan over medium-low heat, add 1 tbsp of butter, cinnamon, ¼ of apple juice, cook until apples are tender and liquid is a syrup like consistency.
2. Then add caramel, gently stir,(Note: If syrup is to thick just add a little more apple juice).

For The Apple Jacks:
1. Heat skillet over medium-low heat or electric griddle to 375°.

Crispy Fish & Grits

Fresh Whiting and hominy grits.

Ingredients:
  • 2 tbsp of butter
  • 3 cups of corn oil
  • Lawry's Season Salt®
  • 1 cups of hominy grits
  • ¼ tsp ground black pepper
  • 1 tbsp chopped onion bits
  • 1 cup of all purpose flour
  • ½ cup of yellow corn meal (Indian Head)
  • ¼ cup lemon juice
  • ½ tsp poultry seasoning
  • 2 garlic cloves (minced)
  • ½ cup fresh parsley (diced)
  • 2 large fillet of whiting fish
  • ¼ cup of seasoned Panko breadcrumbs
  • 2 cups of liquid chicken stock (regular)
  • 1 16oz package of shredded sharp white cheese
INSTRUCTIONS:

Crispy Fish & Grits
1. In a medium saucepan on medium-high heat add chicken stock, pepper, 1 tbsp of butter, garlic, ¼ cup parsley and onion bits.
2. Once the liquid comes to a boil add the grits and stir, then cover and reduce heat to a simmer, follow the instructions on the box.
3. Thoroughly rinse off fish with cold water, pour ¼ cup of lemon juice in a flat rimmed pan, add ¼ cup of water.
4. Soak fish in mixture on both sides for 5 minutes.
5. In a large mixing bowl add flour, corn meal and breadcrumbs, add 1 tbsp of Lawry's®, poultry seasoning, then mix thoroughly.
6. Dredge fish breading mixture coating all sides, let sit for 5 minutes and repeat.
7. Meanwhile preheat 2-3 cups of corn oil in a 12" heavy skillet to 375° on medium high heat.
8. Now carefully lower fish into skillet, cook until golden brown, then turnover until the other side is brown.
9. Then remove to an open rack for cooling (Do not Use Paper Towels).
10. When the grits are done, add cheese and stir, remove from heat, leave covered.

Serve fish over grits and garnish with parsley

Fried Chicken & Waffles

This popular Southern recipe is really easy to make. The most important thing is to use pure Maple syrup, because it's the glue that binds this meal together. Add a couple of eggs any style, some dark roast Columbian coffee, a large glass of premium orange juice or 2% milk, then it's a complete breakfast or brunch.

Ingredients:
  • 1 Qt. Buttermilk
  • 1 Qt. Buttermilk
  • Tablespoon of Paprika
  • Lawry's Seasoning Salt®
  • 2-3 lbs Fresh Chicken Wings
  • 2 cups of All Purpose Flour
  • 1 Cup Cornstarch
  • 1 Box Waffle Mix
  • 1 Qt. of Cooking Oil
  • 1 Bottle of Pure Maple Syrup
  • Confectioners Powdered Sugar
INSTRUCTIONS:

Fried Chicken & Waffles
Clean and singe the feathers and hair from the wing with a lighter or torch. Soak the chicken in buttermilk for at least 45 Minutes or overnight. Season the chicken with Lawry's by massaging it into the meat, let stand in fridge for 30 minutes. Mix the flour and cornstarch together adding a table spoon of paprika. Remove chicken from the allow it to come to room temperature then add the chicken and coat thoroughly. Meanwhile mix your waffle mix. Preheat cooking oil to 375° Then deep fry chicken until golden brown turning often. Remove from oil place on an open rack over a drip pan. While the excess oil drips off cook your waffles. Plate your waffles and put your chicken on top then drizzle with maple syrup and sprinkle confectioners sugar over your dish. Enjoy!

Hot Porridge

This hot porridge is so quick and easy, while yet tasty and chock full of healthy ingredients. Check out the recipe below.

Ingredients:
  • 1 tsp cinnamon
  • 1 tbsp coconut oil
  • 1 1/2 cups water
  • 1 tbsp almond flour
  • ½ cup flaxseed meal
  • 1 tbsp coconut flour
  • ½ tsp vanilla extract
  • 2-3 ripe bananas, mashed
Note: Add to this porridge whatever floats your boat.
I switch it up based upon whatever I had on hand, (e.g., blueberries, raspberries, strawberries, cranberries, etc.)
INSTRUCTIONS: Preheat oven at 375°

Hot Porridge
In a medium size pot add water, vanilla extract and coconut oil, bring to a boil. In a bowl combine flaxseed meal, coconut flour, almond flour and cinnamon, mix together. Add dry ingredients to boiling water, stirring continuously. Reduce heat to a slow bubbly simmer and stir in mashed bananas. Cook and stir for five minutes or until porridge reaches desired thickness. Add more water for a thinner porridge. Serve hot with a sprinkle of chopped walnuts and a drizzle of milk and honey or maple syrup over top if desired. Enjoy!

Top porridge with milk, honey or maple syrup, drizzled over porridge.
